Keto - Lets Start With Breakfast
Last week, one of the deans I work with called and said “I have doughnuts.” I’m not talking plain cheap doughnuts, I’m talking Status Dough. I fell into temptation and I went to the doughnut box. I cut off a small piece of an apple fritter, not half but only a fourth, and I ate it. In the past I would have taken half of that fritter and then sneaked back for the other half. This time was different. After that one small piece, I was done. I didn’t even want anymore and it left a bad taste in my mouth. Lesson learned, just say no next time someone at work says, I have doughnuts.
When it comes to breakfast, let's forget about doughnuts, forget about cereal, forget about pop tarts, forget about toast with jam, and even forget about oatmeal. Let's leave out the carbs and let's start the day with a keto breakfast.
Before breakfast though, the first thing I do every morning is to fill an 8oz glass with water. I add 1T lemon juice (squeezed from lemons) and 1T raw unfiltered apple cider vinegar. The water needs to be room temp so I place it in the microwave for a few seconds. If interested, google it and find the many health benefits of both lemon and ACV.
So now what’s for breakfast?
- Eggs - We like eggs! I buy organic range free eggs at Sam’s Club. On a workday, my morning starts with a fried egg topped with shredded cheese with a side of Greek yogurt and a few berries. Sometimes I have two fried eggs. On Sunday before church, I scramble 6 eggs (add a little whipping cream) for the two of us. Shred some cheese on top and Mike sometimes adds a tomato on the side and I sometimes add an avocado. Don’t forget the bacon or sausage.
- Butter - Get rid of that nasty margarine and any other low fat fake butter. Spend the extra money and buy the good stuff. We buy KerryGold grass fed butter and have found it cheaper at Walmart and Aldi’s. I cook with butter and Mike puts it on pancakes, waffles, etc. He leaves his unsalted butter in the pantry so it’s room temperature and easy to spread.
- Pancakes or Waffles - We enjoy our keto blueberry pancakes or waffles on Saturday mornings. Again, don’t forget the bacon or sausage and always use low carb sugar free syrup. You would be surprised how many carbs can be in a bottle of maple syrup. We like Lakanto syrup and I order it online. I also stock up when they have a sale.
- Yogurt - Eat plain Greek yogurt and watch your carbs. I make my own Greek yogurt using my instant pot. Its really easy with FairLife milk and a Fage yogurt starter. Fage is the recommended yogurt for a low carb diet. Yogurt makes a great side to my eggs and also a mid morning snack. I like to add blueberries to my plain yogurt. I had to give up the granola unless I take time to make my own.
- Coffee or Tea - If you’re a coffee drinker, you gotta get rid of the coffee creamers, the sugar, and the sucralose artificial sweeteners. Mike adds a low carb protein shake to his coffee every morning. I drink organic green tea (I order it in bulk on Amazon) with a scoop of vanilla multi collagen protein and a few drops of MCT oil. Mike also uses MCT oil in his coffee/shake. .
- Milk - I mention milk because someone saw Mike at Kroger and asked him later at church about milk. He found a Kroger brand of milk called Carb Master, ultra filtered with 11 grams protein. We also drink FairLife, another ultra filtered milk with 13 grams protein. Both have less sugar and more protein than skim milk.
We tried several pancake recipes before I found this one.
2 eggs
1/4 c heavy whipping cream
1/2 t vanilla
1 c almond flour
1/2 t baking powder
Dash salt
Dash cinnamon
Mix wet ingredients and add in dry ingredients. I add fresh blueberries to the batter also.
This is the super easy waffle recipe I use. I also add a few fresh blueberries.
I love breakfast which is why intermittent fasting would never work for me. There are so many great keto breakfast recipes on Pinterest and I want to try them all. However, time and work gets in the way of my cooking The point of this post is to say that it's not that difficult to get up in the morning and fix a keto breakfast. No matter what your favorite breakfast foods are, you can find a recipe to make it keto. If you like blueberry muffins, search keto muffins. If you like biscuits and gravy, search keto biscuits and gravy. It can be done!
