More Keto
Yes, I admit it, I’m a little obsessed with Keto. Mike and I have been on a low carb diet for the past year and we enjoy food now just as much, if not more, than we use to. We started keto when my doctor tried to put me on a statin drug for my consistently high cholesterol. I tried diet and exercise for years and nothing lowered my cholesterol. Oatmeal every morning, whole grain rice and pasta, a personal trainer, and still the same disappointing results. “Your cholesterol is too high,” said the doctor every year at my annual physical. We were not eating bad but it wasn't working. The only thing that has worked to lower my cholesterol has been a low carb diet. Food is medicine!
A keto low carb diet is not difficult. It just takes time and discipline. You have to cook - your meals can't come out of a box or from a can. You have to avoid sweets unless you make them yourself with sugar and flour substitutes. Trust me, the cravings go away and when you see how much better your feel, you don’t even want the carbs anymore.
Thankfully, I like to cook but I also like easy recipes. When we started, I would buy a head of cauliflower and make my own cauliflower rice. Now I buy frozen cauliflower rice (in bulk from Sams). I’ve learned to double recipes so I have leftovers for lunch the next day and I've gotten better at food prep on the weekend. We are eating pretty good at the Baughman house!
I am sharing just a few of my easy and favorite dinner recipes.

Mike use to love Tuscan Chicken at Olive Garden. I made it prior to keto and thought we would never enjoy Tuscan chicken again. Well guess what, this keto Tuscan Chicken is soooooo good! I serve it with cauliflower rice. The gravy is amazing over the cauliflower rice.
Fried Chicken, you bet! This recipe is so easy and so good. I cut chicken breasts into strips and we love this.
I’ve only made this once but this Chicken Cordon Bleu is really good. How about a little Mexican Chicken.
There's more to life than just chicken. These Pork Chops are so good and the gravy is amazing over cauliflower rice or potatoes.
This is a yummy easy Hamburger Dish.
Beef tips and gravy - the mashed cauliflower and gravy are really good. You won't even miss mashed potatoes.
Mike and I were just saying that we don't even miss bread because I have several wonderful bread recipes.

Pinterest is my place for recipes. Anything you want to make keto, you can find on Pinterest.
We don't go out to eat much and that's ok. I prefer to stay home on a Saturday, grill two steaks, fix a salad (ceasar or kale), and add some kind of keto bread. Going out to eat is doable but we try to be careful where we go and what we order. I've finally gotten to the place where I can say leave off the potatoes or leave off the fries even when they are included with the meal and I'm paying for them anyway. It's hard to find keto side dishes when you go out to eat, especially since I don't like broccoli. Maybe that's why I prefer to stay home.
Keto may not be for everyone but it's been great for us. No one will ever convince me that I need sugar in my diet. My goal is to age gracefully and I believe I'm on the right track with keto.
